Apple Custard Slice

My heart is a swirling mess today, the good sort of mess that proves that I am weak and in need of a great God. Perhaps later, when I know what & how to share, I can open up with what the Lord is doing in this soul of mine. Until then, I've decided to play it safe with simply sharing a recipe. Enjoy :)


It was last Friday, after I dropped my keys off to work, the last tangible evidence that this had been my place of employment, I received a text message from a dear friend, asking "Would you make your famous apple slice for tomorrow's youth meeting?"

This "Famous Apple Slice" has become my signature piece, the quick & easy go to recipe when something yummy and impressive is needed. It is one of those recipes that is easy to memorise, doesn't need to be exact, and can be made using only one bowl in less than 10 minutes. One year, oldest brother asked if that instead of a cake, he could have apple slice instead. He got it :)

I called my dear friend, and exclaimed, why of course, I'd love to bake my apple slice! Perhaps I could come over now and make it at your house?

And of course, she said I should come on over. Thus, I did!

Warning... I only had the 50mm lens on my camera, so be prepared for lots of bokeh!

Take 125g (4oz) butter... and melt it



Take a packet of vanilla cake mix. Yes, use Home Brand!! I'm cheap like that. At least it's made in Australia.


And a cup of desiccated coconut


Mix them all together!


Press into a greased & lined 20 x 30 cake tin


Take one tin of pie apple. The big size (800g = 1 pound, 12 oz. Or something like that) Don't use the cheap stuff for this. Made in Australia helps, too.



Spread apple over the base. I usually chop it a bit finer, and make sure there's no bad bits in it, but that's up to you. Especially if you use the cheap stuff.


Take 300mL of sour cream... again, I used the cheap stuff, but see the kangaroo symbol? That makes it ok.


... and one egg...


... and mix them together. I forgot to take a pic of this, sorry.

Pour over the apple, like this:


And spread it out nice and even!


Sprinkle with cinnamon sugar, or cinnamon & sugar, of whatever you have in your pantry.

Bake for 40 minutes at 180°C (360°F )


Take out, cut, and enjoy! I didn't get a pic of the sliced product, because it was all eaten. And while this didn't win the youth group cooking competition, my brother sure did appreciate it!


Apple Custard Slice


125g (4oz) butter
1 packet vanilla cake mix
1 cup desiccated coconut
800g (1 pound, 12 oz) tin pie apple
300mL sour cream
1 egg
sprinkle of cinnamon sugar

1. Preheat oven to 180°C (360°F )
2. Grease & line lamington tin, approx 20x30 cm (10" x 12")
3. Melt butter
4. Stir in cake mix and coconut and press into tin
5. Spread pie apple over base
6. Mix together sour cream and egg
7. Pour egg & cream mixture over apple & spread evenly
8. Sprinkle with cinnamon sugar
9. Bake for approximately 40 mintutes, or until slightly almost golden brown in the corners
10. Chill for an hour or two (or overnight) before serving.
